This pineapple radish salsa is the perfect addition to freshen up your taco night!
We can sometimes get bored with taco night at our house due to the limitations of eliminating nightshades! BUT, bored no more. I am always trying to freshen my take on CEP/AIP compliant taco essentials! This salsa came to be when I was really craving something like pico de gallo. Before I knew tomatoes and I didn't get along salsa was my jam. But, because this girl doesn't do so well with tomatoes I have to get creative. In my house dip is a food group. My son loves anything he can dip a plantain chip in and this salsa is included!
Its got all the essentials: crucnch and slight spiciness from the radish, sweetness from the pineapple, and freshness from the cilantro.
I literally want to put this on everything. Oh did I mention this salsa is only 3 ingredients!? Yes! Easy and delicious! You can have this as a dip, top your taco bowls with it, or it would be delicous with fish like salmon! I wasn't lying when I said I wanted to put this on everything!
Pineapple Radish salsa (CEP, AIP, Paleo, Whole 30, VEgan)

makes about 1 1/2 cups
1 cup radish diced (about 5 radish)
1/2 pineapple diced
1/4 cup cilantro chopped
1. Add all of your ingredients together and mix well. Serve with your favorite compliant chips like these plantain chips!
