All this month, I apparently only thought about food. I had changed my diet for the season and when I came down with a low grade fever, I was at a conflict. I wanted nutrients, easy food, comfort and also to not have to start over on my keto diet. So I decided to make some curried cauliflower rice.

 I found out too late that I was out of curry paste, I had no cumin, AND  I had already put the cauliflower rice and the coconut milk into the pan. I couldn't waste it. Hark!

 I was also low on groceries and was not about to go find an asian grocery in a place that may not even have one (I moved to a new state just last month). But don't worry. This has a good ending.

In the midst of my curry conflict I made Cream Of Chicken Soup. Win.

And I made it AIP/CEP compliant, too. Double win.

 It was good, it was comforting, and perfect for sick days/winter. Did I mention it can be made in 15 minutes with a kitchen low on ingredients? How many wins am I up to now?

While I originally made this recipe with cauliflower only, I encourage you to try the vegetables you like in this soup. After all, experimentation is the father of all inventions:) If you are unsure, try it the way it was created first, then next time you will know which ones you would like to add. Possible additional vegetables one could add- celery, carrots or leeks or even an additional spoon of fresh chopped parsley. If you eat peas (this is an AIP/CEP reintroduction), then these would also be a good addition. There is room for up to an additional cup of vegetables. As long as there is not more than 3 cups vegetables total, then i believe the soup will not lose the creamy comfort of the recipe. .

Cream of Chicken Soup (CEP,AIP, Wahls, Keto, Paleo)

Serves 1-2

Ingredients:

For the soup:
1 8 ounce box of coconut milk- no guar gum- (about a cup). I use this one.

1/2 cup of chicken bone broth, homemade preferred.

1/2 teaspoon of poultry seasoning *most poultry seasonings will have nightshades or seed based spices so if you are in the elimination phase of CEP or AIP there is a compliant poultry seasoning recipe below

Salt and Pepper to taste (Omit black pepper for AIP)

3- 6 oz of shredded or chopped Chicken- depending on preference.

2 cups Cauliflower Rice. 

1 Tbsp. chopped fresh parsley (optional)

Squeeze of lemon (optional)

CEP Poultry Seasoning: 

2 tsp. ground sage 

1 1/2 tsp. ground thyme 

1 tsp. dried marjoram 

3/4 tsp. dried rosemary 

1/2 tsp. mace 

1 tsp. onion powder

Directions:

1. Add your coconut milk, broth, poultry seasoning, and salt to a pot and bring to a boil on medium heat. 

2. Turn the heat down to a simmer, add in your cauli rice, and chicken and let it cook uncovered for about 7 minutes. 

3. Add in your parsley and lemon juice if you are using and enjoy!
