7 Layer dip, chicken poppers, and pizza....OH MY! These CEP, AIP, and Paleo recipes are great options to take to your superbowl party or make for yourself and/or small group to quietly watch at home! 

Growing up I was never really that interested in watching football. I would have much rather been playing outside, or dancing to spice girls in front of my mirror... which propably is an accurate description of what actually happened during my neighborhood's humongous superbowl party. I always, without a doubt though showed up briefly to get a plate of all of the delciious appetizers. Among my favorites were 7 layer dip, chick-fil-a nuggets, and the ever so classic delicacy... pizza. I have since grown to enjoy watching football especially the New Orleans native Saints! And since my husband and I do not live in New Orleans anymore we tend to try and make something special to enjoy on Sundays when there is a game. So here you are.... Three junk food make overs to satisfy all of your appetizer dreams!

 7 layer dip, fried chicken poppers, and pesto pizza get a real food make-over! Enjoy!

7 Layer Dip (AIP, CEP, Paleo)

makes 8-10 appertizer servings


For the Dip:

9" pie pan

1 container of Kite Hill Cream Cheese (omit if in the elimination phase of CEP or you do not tolerate almonds) 

2 Cups guacomole (store bought or homemade)

1 lb ground beef cooked and seasoned to your liking

1 can black olives diced 

1 cup white onion diced (omit if in the elimination phase of CEP)

1 cup shredded lettuce 

1 1/2 Cups pineapple radish salsa. find the recipe here.

Cilantro and lime juice for garmish 

**If you have successfully done reintroudctions you can add a layer of pico de gallo, salasa, compliant refried beans, or even another kind of vegan cheese


1. If you have not already done so season your ground beef, cook and brown in a skillet and set asisde to cool. 

2. If you have not already done so prepare your guacomole. Mash 2-3 ripe avocados in a medium sized bowl with 1 tbsp. lime juice,  couple pinches of salt, and 1-2 tbsp.chopped cilantro and set aside. 

3. Assemble your layers. Mine looked like this: 

  1. Kite Hill Cream Cheese spread on the bottom (if you tolerate beans you could do a layer of refired beans here in place of cheese)
  2. Guacomole 
  3. Ground Beef (make sure it is cooled) 
  4. Diced black olives 
  5. White onion diced
  6. shredded lettuce 
  7. pineapple radish salsa

4. Serve with plantain chips. I use these. Eat over a salad. If you tolerate cassava and chia seeds these Siete chips make a great corn chip replacement.
